To celebrate Filipino American history month, I made my healthy version of Chicken Adobo. Fun fact: Did you know I’m half Filipino and half Chinese? I was born in Manila and came to the US in 1993. Been living here for 25 years and loving it. 😊 . . . . Okay so here’s how I make my simple adobo. You’ll need: 1 lb organic chicken 1/2 cup organic coco aminos @big_tree_farms (i use this instead of soy sauce) 1/2 cup vinegar black pepper (a pinch or add more per your liking) Bay leaves (6 pieces) 1/2 cup of chicken broth . . . Directions: Boil chicken until light brown in water. Once cooked, save 1/2 cup of chicken broth and drain the rest. In a large pan, place chicken, broth, vinegar and coco aminos in medium heat. After 15 minutes, add pinch of black pepper & bay leaves. . . .
