Bananas Foster-Inspired Oats with Fresh Figs

There’s something about a warm bowl of oatmeal that immediately feels like fall – especially when you top it with caramelized bananas and fresh figs.

These Bananas Foster-inspired oats with figs are sweet, cozy and surprisingly easy to make. The bananas get caramelized in a pan until golden, then I add them to warm oats with ripe figs, chia seeds and bee pollen.

It basically feels like eating dessert for breakfast, which is always a win around here.

And while traditional Bananas Foster is made with butter, brown sugar and rum, this is my simple breakfast-inspired version. You still get that warm caramelized banana flavor without turning breakfast into a whole production.

Why You’ll Love These Banana Fig Oats

This is one of those breakfasts that looks a little fancy but takes very little effort. The warm oats are creamy, the banana gets sweet and caramelized in the pan, and the fresh figs add even more natural sweetness.

It’s also easy to customize. I used flax milk, but you can use whatever milk you already have in the fridge.

Ingredients

  • 1/4 cup oats
  • 1 cup water
  • 1 tablespoon powdered sugar
  • 1/2 banana
  • 1/4 cup flax milk, or your favorite milk
  • 4 ripe fresh figs
  • 1 teaspoon chia seeds
  • 1 teaspoon bee pollen
  • A little oil for the pan

How to Make Bananas Foster-Inspired Oats

1. Cook the oatmeal.
Bring 1 cup of water to a boil in a small saucepan. Add the oats and cook for about 7 minutes, or until they’re soft and creamy.

2. Caramelize the banana.
While the oats cook, heat a little oil in a medium pan. Add the sliced banana and sprinkle with powdered sugar. Cook for about 3 minutes, or until golden brown, then flip and caramelize the other side.

3. Build your bowl.
Spoon the warm oats into a bowl and add the caramelized banana.

4. Add the toppings.
Top with quartered fresh figs, chia seeds and bee pollen. Pour in a little flax milk for extra creaminess.

And that’s it – a cozy fall breakfast that tastes way more indulgent than the amount of work that went into it.

A Few Easy Swaps

No flax milk? Almond, oat, coconut or regular milk all work.

You could also add cinnamon, chopped walnuts or pecans, a drizzle of honey or maple syrup, or a spoonful of Greek yogurt if you want a little more protein.

Save This One for Fall

If you’ve got ripe bananas sitting on your counter, don’t eat them plain – caramelize them. That little extra step is what makes this bowl so good.
