    Healthy Filipino Adobo Chicken

    It took me some time to get a good healthy version of chicken adobo. Finally I found a soy sauce replacement, coco amino, this has been my go to ever since I found. It makes every dish so tasty, especially with stir fry. You can find them at Wholefoods and Costco. Let’s start cooking. Here’s what you’ll need:

    1 lb organic chicken
    1/2 cup organic coco aminos @big_tree_farms (i use this instead of soy sauce)
    1/2 cup vinegar
    black pepper (a pinch or add more per your liking)
    Bay leaves (6 pieces)
    1/2 cup of chicken broth
    Directions:
    Boil chicken until light brown in water. Once cooked, save 1/2 cup of chicken broth and drain the rest.
    In a large pan, place chicken, broth, vinegar and coco aminos in medium heat. After 15 minutes, add pinch of black pepper & bay leaves.
    I eat this with quinoa or brown rice

    Tip: this taste so much better the next day or so 😊
