Eggplant Parmesan Fries


Every Friday I get to treat myself with fries. This time I made it with eggplants. Eating low carb is getting easier everyday. I’m glad there’s another way I can eat fries without the extra guilt. Here’s what you’ll need.

  • 2 medium eggplant or 1 large eggplant
  • 2 large eggs
  • 1/2 cup coconut flour
  • 1/2 cup grated parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon oregano
  • ½-1 cup olive oil (for eggplant)
Peel the eggplant
cut into a shape of fries
beat the 2 eggs
mix remaining ingredients
Soak the eggplant in the egg and to the seasoning mix


heat pan into medium heat, add olive oil. Then add the fries. Cook until brown
I topped with more parmesan cheese and used a low carb marina sauce for dipping. This is so yummy. 🙂

I’ve been on keto for 3 weeks now and I thought it was going to be so tough. I was wrong…. The best part about eating this way is I cook more and  I’ve lost 7 lbs. I’m so happy with the results.
