Every Friday I get to treat myself with fries. This time I made it with eggplants. Eating low carb is getting easier everyday. I’m glad there’s another way I can eat fries without the extra guilt. Here’s what you’ll need.
- 2 medium eggplant or 1 large eggplant
- 2 large eggs
- 1/2 cup coconut flour
- 1/2 cup grated parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon oregano
- ½-1 cup olive oil (for eggplant)







I’ve been on keto for 3 weeks now and I thought it was going to be so tough. I was wrong…. The best part about eating this way is I cook more and I’ve lost 7 lbs. I’m so happy with the results.
