
Lately I’ve been trying to keep meals simple, realistic, filling, and easy to make during busy weeks. Nothing overly complicated or restrictive, just meals I actually make a lot at home and genuinely look forward to eating.

crispy dumplings wrapped in a tortilla, topped with egg wonton + chili oil dip
🍚 Teriyaki bowl:
chicken, rice, teriyaki sauce
🍕 Low carb pizza:
low carb tortilla, sauce, cheese, pepperoni
🍗 Comfort dinner:
store bought salad, roasted chicken + Reser’s potato salad

Korean Marinated Eggs Recipe
These Korean marinated eggs are so simple but so good 🥚🍚
If you have eggs and soy sauce at home, this is an easy recipe to try. The eggs soak in a savory marinade and taste even better the next day. I love serving this over hot rice and spooning some of the sauce on top.

Ingredients:
- 6 eggs
- 1 cup soy sauce
- 1 cup water
- 1–2 tbsp sesame oil
- 3 cloves garlic, minced
- ¼ onion, sliced
- 2 green onions, chopped
- 1–2 tbsp sugar
- 1 tsp sesame seeds
Directions:
Boil the eggs, peel, then let them marinate overnight so they soak up all that flavor.
Simple ingredients, easy to make, and perfect for any time of the day.
Easy Healthy Ham Wrap Recipe

All You Need:
- Hot honey ham
- Provolone cheese
- Lettuce
- Tomato
- Mayo
- Mustard
- Onion
- Sprouts
- Avocado
- Wheat wrap
Quick, easy, filling, and perfect when you need something simple but still satisfying.
Blanket Dumplings (No Folding Needed)
If you’ve ever wanted dumplings but didn’t feel like folding a bunch of them… this is your shortcut 👀
Crispy on the bottom, juicy inside, and honestly so easy to make.

Ingredients:
- 1 lb ground pork
- 2 tbsp scallions (plus more for topping)
- 1/4 cup chopped onion
- 2 tbsp minced ginger
- 1 tbsp minced garlic
- 2 tbsp oyster sauce
- 2 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tsp cornstarch
- Oil for cooking
- 1/2 cup water
Toppings:
- Scallions
- Garlic chili oil
Directions:
Mix everything together in one bowl. Roll into small balls. Place wonton wrapper on top (no folding needed). Pan fry until golden. Add water, cover and steam. Uncover and crisp the bottom. Top with chili oil + scallions.
Save this one for your next easy dinner.

Easy Teriyaki Chicken Bowl
Teriyaki Sauce
- 1/3 cup soy sauce
- 1/4 cup mirin
- 2 tbsp brown sugar
- 3 cloves garlic, minced
- 1 tsp fresh ginger, grated
Chicken
- 3 boneless, skinless chicken thighs
- Salt & pepper
- Avocado oil spray
For the Bowl
- Steamed white rice
- Steamed broccoli
- Scallions + sesame seeds
How I Make It
- Whisk all sauce ingredients until sugar dissolves.
- Pound chicken between parchment paper, season with salt & pepper.
- Heat pan over medium, spray avocado oil, cook chicken until golden.
- Add sauce, simmer until thick and glossy.
- Serve over rice with broccoli. Finish with extra sauce, scallions & sesame seeds.
Low Carb Tortilla Pizza
Craving pizza but still staying on track? This low carb tortilla pizza has been my go-to lately 🍕
It’s quick, simple, and fits perfectly into an 80/20 lifestyle… because let’s be real, we’re not cutting out pizza, we’re just doing it smarter.
Crispy low carb tortilla, marinara, melted mozzarella, and pepperoni… finished in the air fryer for that golden cheesy bite.

Ingredients:
- Mission low carb tortilla
- Aldi skim shredded mozzarella
- Pepperoni
- Pasta sauce
- Fresh Farms olive oil
Directions:
Air fry at 390° for 7–8 minutes (adjust based on your air fryer).
Easy Weeknight Comfort Dinner
Life gets busy, and sometimes the best dinners are the simplest ones.
