Ground Beef & Crispy Rice Bowl

Servings: 2–3 servings

This crispy rice beef bowl has been one of my favorite easy meals lately. The crispy rice adds the best texture, and paired with savory Laura’s Lean ground beef, fresh toppings, and a drizzle of sriracha mayo, it comes together into such a satisfying meal for busy days.

Ingredients:

Crispy Rice
• 2 cups cooked jasmine rice
• 1 tsp soy sauce
• 1 tsp sesame oil
• 1 tsp chili crisp
• 1 tbsp oil

Ground Beef
• 1 lb Laura’s Lean Ground Beef
• 2 cloves garlic, minced
• 1/4 onion, diced
• 1 tsp fresh ginger, minced
• Salt & pepper
• 1 tbsp soy sauce
• 1 tbsp oyster sauce
• 1 tsp brown sugar

Toppings
• Spinach
• Cucumber
• Avocado
• Green onions
• Sriracha mayo

Instructions:

  1. Preheat oven to 425°F.
  2. In a bowl, mix cooked rice with soy sauce, sesame oil, chili crisp, and oil. Spread onto a parchment-lined baking sheet and press into an even layer. Bake for 20–25 minutes until crispy.
  3. While the rice cooks, heat oil in a pan over medium heat. Sauté garlic, onions, and ginger until fragrant.
  4. Add Laura’s Lean Ground Beef and cook until browned. Season with salt, pepper, soy sauce, oyster sauce, and brown sugar.
  5. Build your bowl with spinach, cucumber, avocado, crispy rice, and ground beef.
  6. Finish with sriracha mayo and green onions.

Notes:
• Day-old rice works best for extra crispy texture
• Adjust spice level with more or less chili crisp or sriracha mayo
• Great for easy weeknight meals
