An easy dinner for the “what are we eating?” nights
Some nights, figuring out what to make for dinner feels like more work than actually cooking it. That’s where a simple chicken stir-fry comes in: a little chopping, a quick sauce, and everything cooks in one pan.
This honey soy chicken and veggie stir-fry combines chicken thighs, broccoli, and red bell pepper with a sweet-savory garlic sauce. The chicken gets a little golden, the vegetables keep some bite, and the sauce brings everything together without a long ingredient list.
This is the kind of meal that fits right in with Diet and Fries: good food, a little balance, and no need to make dinner a whole production. Serve it over rice, spoon it into a bowl on its own, or use what you have to make it work for your night.

Honey Soy Chicken & Veggie Stir-Fry recipe
Serves: about 3–4 with rice
Estimated prep time: 10 minutes
Estimated cook time: 15 minutes
Estimated total time: 25 minutes
Ingredients
For the stir-fry:
● 1 lb boneless, skinless chicken thighs, cut into small, evenly sized pieces
● 2 cups broccoli florets, cut small
● 1 red bell pepper, sliced
● 1 tbsp cooking oil
For the sauce:
● 3 tbsp soy sauce
● 1½ tbsp honey or brown sugar
● 1 tbsp rice vinegar
● 2 tbsp water
● 1 garlic clove, minced
● Optional: ½ tsp grated fresh ginger
Optional for serving:
● Sliced green onion
● Sesame seeds
● Cooked rice
Instructions
1. Mix the sauce. Whisk together the soy sauce, honey or brown sugar, rice vinegar, water, garlic, and optional ginger. Set aside before you start cooking.
2. Sear the chicken. Heat the oil in a large skillet over medium heat. Add the chicken in a single layer. Cook undisturbed for 2–3 minutes, then turn and cook another 3–4 minutes. Work in batches if needed so the pan isn’t crowded.
3. Add the vegetables. Add the broccoli and sliced bell pepper. Stir-fry for about 3 minutes, or until the vegetables start to become crisp-tender. If the broccoli needs more time, add a splash of water and briefly cover, then uncover.
4. Add the sauce. Lower the heat and pour in the sauce. Toss for 1–2 minutes, or until everything is coated and the chicken is cooked through. Timing depends on the size of the pieces; check that the chicken reaches 165°F in the center.
5. Serve. Finish with green onion and sesame seeds if you like. Serve over cooked rice or enjoy as is.
Little tips that make a difference
Prep before turning on the stove. Stir-fry moves quickly. Having the vegetables chopped and the sauce mixed makes the cooking part much easier.
Keep the broccoli pieces small. Large florets take longer to cook than thinly sliced bell pepper. Smaller florets help everything finish closer together.
Give the chicken a little space. Crowding the skillet can leave the chicken steaming in its juices. A single layer helps it get some color before you stir.
Add the honey sauce near the end. Lowering the heat before adding the sauce helps keep the sugars from scorching. This is a light coating sauce, rather than a thick takeout-style glaze.
Easy ways to serve it
A bowl of rice is an easy pairing because it catches the extra sauce. Leftover rice makes this dinner even simpler—just reheat it separately while the stir-fry cooks.
You can also enjoy the chicken and vegetables on their own. There’s no need to overthink the plate: choose the version that sounds good and works for you.
Can I change the vegetables?
Yes. Sliced mushrooms, snap peas, or zucchini can work here too. Keep in mind that different vegetables release different amounts of water and cook at different speeds. Add firmer vegetables first and quicker-cooking vegetables later so they keep their texture.
A little balance, a lot of flavor
An easy homemade dinner doesn’t need to be fancy to hit the spot. Chicken, a couple of vegetables, and a sauce you can stir together in a minute are plenty. Save this honey soy chicken stir-fry for the next time dinner sneaks up on you.
