Easy Korean Marinated Eggs (Mayak Eggs Recipe)

If you love easy egg recipes, you have to try these Korean marinated eggs, also known as Mayak Eggs!

They’re savory, slightly sweet, garlicky, and packed with flavor. The best part? You probably already have most of the ingredients in your kitchen.

These eggs soak overnight in a simple soy sauce marinade with garlic, onions, sesame oil, and sesame seeds. Serve them over warm rice with a spoonful of the marinade for an easy, satisfying meal.

What Are Mayak Eggs?

Mayak eggs are Korean soy-marinated eggs traditionally made with soft-boiled eggs and a sweet and savory soy sauce marinade.

The word “mayak” translates to “drug” in Korean, a playful reference to how irresistible these flavorful eggs can be.

While they’re traditionally made with jammy yolks, you can also make them with fully cooked eggs.

Ingredients

Servings: 6 eggs

  • 6 large eggs
  • 1 cup soy sauce
  • 1 cup water
  • 1–2 tablespoons sesame oil
  • 3 garlic cloves, minced
  • ¼ onion, chopped
  • 2 green onions, chopped
  • 1–2 tablespoons sugar
  • 1 teaspoon sesame seeds

Optional: Sliced chili peppers for a little heat.

How to Make Korean Marinated Eggs

Step 1: Boil the Eggs

Bring a pot of water to a boil. Gently add the eggs and cook for 6–7 minutes for jammy yolks or 9–11 minutes for fully cooked yolks.

Immediately transfer the eggs to an ice bath. Once cooled, carefully peel them.

Step 2: Prepare the Marinade

In a container, combine the soy sauce, water, sesame oil, minced garlic, chopped onion, green onions, sugar, and sesame seeds.

Stir until the sugar dissolves.

Step 3: Add the Eggs

Place the peeled eggs into the marinade, making sure they’re mostly submerged.

Step 4: Refrigerate Overnight

Cover and refrigerate for at least 6 hours, preferably overnight, to allow the eggs to absorb the flavors.

Step 5: Serve and Enjoy

Serve the marinated eggs over a bowl of warm white rice. Spoon a little marinade and some of the chopped onions over the top.

Tips for Making the Best Mayak Eggs

For jammy yolks: Cook the eggs for approximately 6½ minutes and immediately transfer them to an ice bath.

For fully cooked eggs: Cook them a little longer. They’ll still absorb the delicious marinade.

Adjust the sweetness: Add more or less sugar depending on your preference.

Make them spicy: Add sliced jalapeños or Korean chili peppers to the marinade.

Storage: Store the eggs in a covered container in the refrigerator and enjoy within 3–4 days.

What to Serve With Korean Marinated Eggs

My favorite way to enjoy these eggs is over warm white rice with a little marinade spooned over everything.

They’re also delicious with ramen, rice bowls, or alongside vegetables for a quick and satisfying meal.
