Blackberry Chia Pudding

Its blackberry season in California and I’ve been craving to eat something cold for a snack. Since i’m on a Keto diet (low carb, no sugar) I had to play around with a few recipes I used to put honey to sweeten up the chia pudding.  But since honey has too much sugar and it will spike up my insulin…I had to find an alternative… and finally I found my zero calorie sweetener, monk fruit sugar. Now the recipe is ready to be shared here.

1 cup of unsweetened almond milk (or milk of choice)

½ cup of frozen berries

½ cup of black berries

2 tsp of vanilla extract

t tsp of monkfruit sugar (stevia, honey or regular sugar)

2 tbsp of chia seeds

Directions:

Step – 1 Blend frozen berries with ¼ cup of milk and mix 1 tbsp chia seeds & 1 tsp of vanilla. Put this in a bowl then refrigerate for 15 minutes

Step 2 – In a small bowl combine ¼ cup of milk, 1 tbsp of chia seeds and 1 tsp of vanilla. Add more chia seeds if you need it to be thicker. Put it in the fridge for 15 minutes.

Step 3 – Once the mixture is thicken up put this on top with blend frozen berries. Refrigerate overnight. Then top off with fresh blackberries.
