I love fries and being on Keto I have to find creative ways for low carb options. Thanks to butternut squash I can make some yummy ones.
Trader joes sells Butternnut squash zig zags, sometimes I’m pressed for time & need something I can easily prepare. I’m keeping this simple using garlic salt, olive oil & parmesan cheese. Basic ingredients makes my life easier too.
In a large bowl, I’m going to combine butternut squash, garlic salt & olive oil
Then baking it for 25-30 minutes at 425 degrees
For the dipping sauce, I made spicy siracha mayo. 1/4 cup of mayo (you can use vegan mayo) and 1 tbsp of siracha.

1 zig zag butternut squash from Trader Joes
1 tablespoon olive oil
1/2 teaspoon garlic salt
1/4 cup freshly grated Parmesan cheese
Dipping sauce: 1/4 cup mayo and 1 tbsp siracha
