    Beef & Broccoli (low carb)

    I finally figured out to make a really good beef & broccoli.  I realized buying grass fed meat & organic vegetables makes the flavor easier to season. I’m lucky to have a discount grocery store around my house. I usually buy my food at Grocery Outlet, they are located around San Diego. They have a great selection and affordable organic products. I bought a grass fed beef for $6.49 (10 ounces) and a head of broccoli for $3.99. If you are unable to buy grass fed and organic products, do what works for you. Don’t break the bank,  buy what’s accessible to you.

    I eat low carb 90% of the time, I used Miracle Noodles (Ziti pasta as my “low carb noodles”) as my “carb”

    Here’s what you’ll need:

    10 ounces of beef

    2 heads of broccoli

    3 tbsp of coconut aminos

    Sprinkle of salt & pepper

    1 tbsp of coconut oil

    1 clove of garlic

    1/2 red onion

    Directions:

    In a medium pan heat up the coconut oil then add garlic and red onion. Stir until brown. Cut the beef into slices then add in the pan.  Add 3 tbsp of coconut amino, salt & pepper. Cook for 10 minutes.

    Cut broccoli head and in a medium pot boil 4 cups of water. Then add broccoli for 15-20 minutes. Once cooked, add broccoli with the cooked beef. Stir for 5 minutes.

    Optional brown rice or Miracle noodles (ziti pasta, I used this as my rice)

    Here’s the easiest recipe to make your own low carb bread. Not only its healthy  you can customize this to make it sweet or savory.  It’s gluten free, low carb & delicious. You can make this daily for a single serving.

    Some people use a mug, I think it’s easier to use a small bowl to mix all the ingredients.

    Note: You can add your own seasonings parmesan cheese, salt & pepper, etc. Customize based on your taste buds.

    Ingredients:

    1 large egg

    1 tbsp unsweetened almond milk

    1 tbsp coconut oil

    1 tbsp coconut flour

    1 tbsp almond flour

    1/4 tbsp of baking powder

    Directions: Put all ingredients in a bowl and stir. Then put in the microwave for 90 secs.

    Remove from bowl carefully (its hot) then slice it .

    Optional – In a medium pan, add 1 tbsp of coconut oil then fry it for 30 seconds on each side.

    I’m eating this with bacon, eggs & topped off with green onions.
