    Low Carb Parmesan Zig Zag Fries

    I love fries and being on Keto I have to find creative ways for low carb options. Thanks to butternut squash I can make some yummy ones.

    Trader joes sells Butternnut squash zig zags, sometimes I’m pressed for time & need something I can easily prepare. I’m keeping this simple using garlic salt, olive oil & parmesan cheese. Basic ingredients makes my life easier too. 7583927040_IMG_0031.jpg

    In a large bowl, I’m going to combine butternut squash, garlic salt & olive oil 7583927040_IMG_00337583927040_IMG_0034

    Then baking it for 25-30 minutes at 425 degrees7583927040_IMG_0036

    For the dipping sauce, I made spicy siracha mayo. 1/4 cup of mayo (you can use vegan mayo) and 1 tbsp of siracha.

    Ingredients:

    1 zig zag butternut squash from Trader Joes
    1 tablespoon olive oil
    1/2 teaspoon garlic salt
    1/4 cup freshly grated Parmesan cheese

    Dipping sauce: 1/4 cup mayo and 1 tbsp siracha

    Directions

    Preheat oven to 425 degrees F.
    In a large bowl add butternut squash, olive oil and garlic salt. Gently toss

  • Blackberry Chia Pudding

    Blackberry Chia Pudding

    Its blackberry season in California and I’ve been craving to eat something cold for a snack. Since i’m on a Keto diet (low carb, no sugar) I had to play around with a few recipes I used to put honey to sweeten up the chia pudding.  But since honey has too much sugar and it will spike up my insulin…I had to find an alternative… and finally I found my zero calorie sweetener, monk fruit sugar. Now the recipe is ready to be shared here.

    1 cup of unsweetened almond milk (or milk of choice)

    ½ cup of frozen berries

    ½ cup of black berries

    2 tsp of vanilla extract

    t tsp of monkfruit sugar (stevia, honey or regular sugar)

    2 tbsp of chia seeds

    Directions:

    Step – 1 Blend frozen berries with ¼ cup of milk and mix 1 tbsp chia seeds & 1 tsp of vanilla. Put this in a bowl then refrigerate for 15 minutes

    Step 2 – In a small bowl combine ¼ cup of milk, 1 tbsp of chia seeds and 1 tsp of vanilla. Add more chia seeds if you need it to be thicker. Put it in the fridge for 15 minutes.

    Step 3 – Once the mixture is thicken up put this on top with blend frozen berries. Refrigerate overnight. Then top off with fresh blackberries.
